Baked Maple Salmon

The wife of my boss always jokes that she doesn’t cook. Mainly because her husband cooks so often , she has never needed to learn how. One day, per his instruction, she made this recipe. It was one of the best meals I had ever eaten at work or elsewhere. It’s a great recipe to cook for dinner guests so you can focus on socializing instead of prepping a difficult recipe in the kitchen.

 Maple and Herb Salmon.

  • 1 Salmon filet (like available at Costco)
  • Equal parts maple syrup and water (about 1/2 cup each)
  • Dried Dill or Rosemary

 

Smother entire Salmon (can do individual filets as well) with the Maple Syrup & Water solution and a generous amount of Dill or Rosemary so that it is evenly spread on both the top and bottom of the salmon.

 

Bake in foil covered baking dish at 400 degrees F for 30 minutes.

 

Slice and enjoy!

Tandoori Chicken

In a mixing bowl, mix:

 

  • 1 Cup Plain Yogurt
  • 1 Tablespoon Grated Onion
  • 1 Tablespoon Grated Garlic
  • 1 Tablespoon Grated Ginger
  • 1 Tablespoon Grated Shallot
  • 1 Tablespoon Chili Powder
  • 1 Tablespoon Garam Masala
  • 2 Tablespoons Lemon Juice.
  • Drop of Red Food Coloring (completely optional but chef who shared this recipe from a well-known hotel uses it. I don’t).

Add

  • Chicken Pieces (skinless Chicken works well).

 

Marinate for 24 hours.

Then, Bake on a rack in a Preheated Oven at 350 degrees F for 25-35 minutes.

 

Serve with peeled , sliced Yellow Onion and Lemon Wedges with Rice or Naan Bread on the side.

 

 

 

Quinoa Salad

Quinoa, a grain, has a lot of protein in it. It is so easy to prepare and add whatever raw vegetables you like to it. This is one of my favorite ways to make it.

 

  • 1 Cup Quinoa cooked per package directions 
  • 1/2 Cup Bite sized pieces of Broccoli Florets (just break them off or cut them off)
  • 1/2 Cup Bite sized pieces of Red and Yellow Bell Peppers
  • 1 Tablespoon Fresh chopped Basil
  • 1/2 teaspoon of Lemon Zest
  • Juice of 1 Lemon
  • Splash of Red Wine Vinegar
  • Splash of Olive Oil
  • Salt and Pepper to taste

 

Mix and eat warm right away. Or chill. Works well for picnics.

Italian Wedding Soup

This is a staple in our house and I always make it after Thanksgiving as it’s a great way to use up Leftover Turkey. You can also use Chicken, Sausage or Meatballs.

 

  • Two cleaned Carrots , chopped
  • Two Stalks Celery, chopped
  • 1/2 Onion, chopped
  • 6 Cloves of Garlic, chopped
  • Water or broth to fill up 1/2 to 2/3rd of large pot
  • Cut up Chicken or Turkey (or Whole Meatballs or Sliced Sausage)
  • 1-2 Scrambled Eggs
  • Several  handfuls of Spinach (about 1/2 package but can vary).
  • 1/4 Cup Parmesan Cheese

Bring water to a boil in and add vegetables (except Spinach).

 

Let simmer to make a vegetable broth.

 

Add poultry or meat or sausage.

 

Add Spinach, push down to cover with simmering liquid.

 

When Spinach is cooked, swirl in the Egg and then immediately swirl in the Parmesan.

 

Serve hot.
