Pork Chops with Cocoa Spice Rub

When I managed restaurants, most of the kitchen staff were from Oaxaca, a beautiful part of Mexico where indigenous colors and culture abound. Sometimes they would make their own (off menu) food on the line to eat and share. One of my favorites was a meat rub Chucho would mix from dried spices and ingredients and sprinkle over cut meat that he’d fry in a pan and serve with corn tortillas. While the Oaxacan mix is usually paprika,  cinnamon, (unsweetened) cocoa powder, cumin, salt, oregano, black pepper and cayenne, below is another variation. But you can have fun experimenting with any mix you like, and, it’s as easy as mixing the ingredients in a bowl and storing in your cupboard! This spice mix also makes a great gift bottled and tied with a simple ribbon. This rub also can be used on steak, fish or shrimp.

  • 2 Tablespoons Unsweetened Cocoa
  • 1 Tablespoon Powdered Cumin
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon any Chili Powder (my favorite is Ancho Chili).
  • 1 Tablespoon Brown Sugar (this allows the meat to carmelize)
  • 1 teaspoon each Salt and Black Pepper

 

Rub on both side Pork Chops (or a Pork Tenderloin would also work).

 

Fry in Pan in oil or BBQ for 3-4 minutes per side (depending on thickness. 1 minute longer per side if really thick, 1 minute less if thin). I prefer to Pan Fry so the spices stay on the meat and do not fall through into the grill grates.

Thai Cashew and Coconut Snack

This is a classic snack served on the streets of Thailand. You can also put it on a salad for an International Flair. If you like spicy and sweet food, it is addicting.

 

  • 1 Tablespoon Peanut Oil
  • 1 Tablespoon Honey
  • 2 Cups Cashews
  • 1 Cup Unsweetened Coconut Flakes
  • 1 Thai Red Chili or alternatively Pinch (or more if you want serious heat) Chili Flakes

 

Melt honey in the heated oil.  Add nuts and toss. Add coconut and chili flakes and toss. Serve in paper cups or cones.

 

Baked Maple Salmon

The wife of my boss always jokes that she doesn’t cook. Mainly because her husband cooks so often , she has never needed to learn how. One day, per his instruction, she made this recipe. It was one of the best meals I had ever eaten at work or elsewhere. It’s a great recipe to cook for dinner guests so you can focus on socializing instead of prepping a difficult recipe in the kitchen.

 Maple and Herb Salmon.

  • 1 Salmon filet (like available at Costco)
  • Equal parts maple syrup and water (about 1/2 cup each)
  • Dried Dill or Rosemary

 

Smother entire Salmon (can do individual filets as well) with the Maple Syrup & Water solution and a generous amount of Dill or Rosemary so that it is evenly spread on both the top and bottom of the salmon.

 

Bake in foil covered baking dish at 400 degrees F for 30 minutes.

Gooey Warm Chocolate Pots

An amazingly impressive and easy dessert to make for company. You can use ramekins or stoneware teacups that are safe to use in one’s oven.

Easy Molten Chocolate in Cups

Melt together in a microwave (10 seconds at a time, stirring WELL in between until melted)

 

  • 4 ounce of Semi-Sweet Chips with
  • 4 ounce (1 stick) of Butter

 

In another mixing bowl, whisk together:

 

  • 2 Eggs
  • 3 Tablespoons Flour
  • 1/2 Cup Confectioners Sugar

 

When well blended, marry the chocolate mixture in and whisk well.

 

Pour into greased oven proof cups and bake at 400 Degrees F for 20 minutes. Sprinkle more Powdered Sugar on top to garnish and serve in the cups after topping with fresh berries and whipped cream if you’d like.
